Grilled kingfish with tamarind stir-fried vegetables
The kingfish is deservedly known for its sweet, rich flavour and firm flesh with few bones. It is well suited to a range of cooking methods. Here, it is grilled and served with tamarind flavoured vegetables.
1.Heat oil in wok; stir-fry ginger, garlic and chilli until fragrant. Add capsicum; stir-fry until capsicum is tender. Add stock, sauces, sugar and tamarind; bring to the boil. Boil 1 minute. Add buk choy, gai lan and onion; stir-fry until greens are just wilted. Remove from heat; stir in coriander.
2.Meanwhile, cook fish on heated oiled grill plate (or grill or barbecue) about 5 minutes or until cooked as desired. Serve fish with vegetables.
