1.Heat oil in wok; stir-fry snow peas, onion and garlic until snow peas are tender. Add rice, sauces and juice; stir-fry until hot. Remove from heat; stir in pineapple and tomato, season to taste.
2.Serve fried rice sprinkled with coriander.
You need to cook about 1⅓ cups white long-grain rice the day before making this recipe. Spread it evenly onto a tray and refrigerate overnight.Note
