Fish cutlets with pesto butter

Kingfish fillets work well with this dish as it has a robust flavour that stands up well to the pesto. Served here with spinach, you have a healthy, low carb evening meal.

Method

1.Blend or process butter, pesto, pepper and rind in small bowl until well combined.
2.Heat and oil a large frying pan. In batches, cook fish until browned on both sides and cooked as desired.
3.Place butter mixture in same pan and stir over low heat until butter melts. Return fish to pan; coat with melted butter mixture.
4.Serve fish with baby spinach leaves.
