1.Combine chicken, onion, garlic, ground cumin, ground coriander, breadcrumbs and fresh coriander in a medium bowl, season. Shape ¼-cups of mixture around 12 metal skewers to make sausage shapes. Place kofta on a tray. Cover, refrigerate 10 minutes.
2.Meanwhile, place oil, vinegar, tomato, red onion and mint in a medium bowl, toss gently to combine, season to taste.
3.Cook kofta on a heated oiled barbecue grill plate for 15 minutes or until browned all over and cooked through.
4.Serve kofta with tomato salad and tzatziki
