Minted yoghurt


1.Place beans in medium saucepan of boiling water, return to the boil; drain. When beans are cool enough to handle, peel.
2.Place peas in medium saucepan of boiling water; reduce heat. Simmer until tender, drain. Mash beans and peas together in large bowl; cool.
3.Mix onion, garlic, flour, breadcrumbs and egg into bean mixture; season to taste. Using wet hands, shape mixture into eight patties; place on baking-paper-lined tray. Cover; refrigerate 30 minutes.
4.Meanwhile, make minted yoghurt. Whisk all ingredients in small bowl until combined; season to taste.
5.Lightly spray heated large frying pan with oil; cook patties, in batches, until browned lightly and heated through.
6.Serve patties with minted yoghurt and, if you like, baby rocket (arugula) leaves.
