1.Boil, steam or microwave broad beans until just tender. Peel; place in medium bowl. Add white beans, onion, cucumber, rind, juice and oil; toss gently to combine.
2.To make the fried capers: Pat capers dry with absorbent paper. Heat oil in shallow small frying pan; add capers carefully (they will splatter), fry for about 2 minutes. Drain on absorbent paper.
3.Arrange salmon slices on serving plates, top with fried capers; serve with bean salad and, if you like, lemon wedges.
