Baked lamb chops with capsicum and tomato

Succulent, juice lamb chops with sweet baked capsicum and fresh zesty tomato make a delicious and simple midweek dinner.



1.Preheat oven to 200°C.
2.Heat a large flameproof baking dish over high heat. Cook lamb until browned all over. Add capsicum, tomato and onion to dish.
3.Transfer dish to oven; roast, uncovered, for 30 minutes or until lamb is cooked through and vegetables are tender.
4.Microwave mashed potato according to directions on tub.
5.Serve lamb with vegetables and mashed potato.serving suggestion Steamed greens (such as peas, broccolini and beans) sprinkled with 1 tablespoon of baby mint leaves.

We used prepared mashed potato, available from the refrigerated section at supermarkets, to cut down on cooking time for busy families. If you’re not time poor, make your own mashed potato to serve with the lamb.
