1.Boil, steam or microwave carrots until tender; drain. Rinse under cold water, drain.
2.Squeeze excess moisture from beetroot.
3.Combine yogurt, cumin, mint, juice and oil in small bowl.
4.Serve vegetables drizzled with yogurt mixture.

Beetroot will discolour your skin, so use disposable gloves when handling it. Baby carrots are also called dutch carrots, it’s rarely necessary to peel them. Prepare beetroot, carrots and the yogurt mixture the day before the picnic. Assemble salad at serving time.
