Asian marinara mix with coconut rice

Fresh seafood is marinated with Asian flavours and served on a bed of creamy tumeric coconut rice - whip up this delicious and filling dinner for your family in no time at all.

Method

1.Place rice in a large saucepan and fill with water. Bring to boil on high and boil 7 minutes. Drain and return to saucepan with coconut milk and turmeric. Reduce heat to low. Cook, covered, 2 minutes. Remove from heat. Set aside, covered, until ready to serve.
2.To make salad: In a bowl, combine cucumber, onion and mint.
3.Meanwhile, in a bowl, combine pulp, chilli and sugar. Add marinara mix and marinate 5 minutes.
4.Heat oil in a wok or large frying pan on high. Stir-fry marinara mix in 2 batches, 3-4 minutes each, until just cooked through. Return all seafood to wok and season to taste. Toss well and serve on a bed of rice, topped with salad.
