Zabaglione

Sometimes a dessert, sometimes a beverage, we can all agree that the deliciously rich and fluffy Italian zabaglione is a delight, whatever its form. A touch of marsala gives this version its kick.

Ingredients

Method

1.Place eggs, yolks and sugar in large heatproof bowl over large saucepan of simmering water (make sure the water does not touch bottom of bowl).
2.With an electric hand mixer or whisk, beat egg mixture constantly until light and fluffy. With motor operating, gradually add marsala and continue beating about 10 minutes or until mixture is thick and creamy.
3.Spoon zabaglione into serving glasses; serve with biscuits.
