Ingredients: 1/2 cup white sugar; mint leaves, chopped, 1/4 cup; 1 teaspoon lemon zest; 1/4 pineapple peeled, sliced; 1 mango, peeled, sliced; 2 kiwi fruit, peeled, sliced; 4 scoops (400ml) lemon sorbet

mint leaves, chopped, 1/4 cup

1 teaspoon lemon zest

1/4 pineapple peeled, sliced

1 mango, peeled, sliced

2 kiwi fruit, peeled, sliced

4 scoops (400ml) lemon sorbet

Method

1.In a food processor, combine sugar, mint and zest. Process to combine.

2.Arrange fruit in 4 glasses or bowls. Top with a scoop of sorbet and sprinkle with sugar mixture. Serve straight away.

Prepare the mint mixture just before serving to achieve a fresh zing.
