Sabayon

Sabyon is the French name for Zabaglione, the fluffy custard and sometimes beverage. The lime flavoured sabayon is delicious with poached fruit such as peaches, mandarins or mango. Enjoy shortbread biscuits dipped in the coffee based version.

Method

1.Combine ingredients in medium bowl set over medium saucepan of simmering water; do not allow water to touch base of bowl. Whisk vigorously and continually about 5 minutes or until sauce is thick and creamy.
2.For lime flavoured sabayon, add 1 teaspoon finely grated lime rind and 2 teaspoons lime juice to sabayon ingredients before whisking over simmering water.
3.For coffee sabayon, dissolve 2 teaspoons instant coffee granules with ¼ cup water in small jug; use instead of wine with ingredients before whisking over simmering water.

A flat sabayon is the result of underwhisking. You must whisk vigorously to incorporate as much air as possible. Cooking the mixture too quickly will make the sabayon too thick; prevent this by keeping the water in the saucepan at a low simmer.
