Lemon balm syrup with pineapple and passionfruit

Method

1.Combine lemon balm leaves, sugar and the water in a small saucepan; stir over low heat until sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, for 5 minutes.
2.Remove from the heat; cool. Strain syrup into a jug; refrigerate until cold.
3.Divide the pineapple between four serving bowls and spoon over the passionfruit pulp. Drizzle with the syrup; serve with ice-cream.

Not suitable to freeze. For a refreshing drink, add the syrup to sparkling mineral water.
