There’s something so special about fruity soft serve.

These sweet and tasty soft serves are made completely from a variety or frozen fruits to ensure they’re completely vegan. Three fruity flavours to choose from avocado and lime, raspberry and banana or mango and passionfruit options to suit all taste buds.

Mango and passsionfruit
Avocado and lime

Method

Mango and passionfruit

1.To make mango and passionfruit soft serve, process frozen mango until very smooth. Add half the passionfruit; pulse until well combined. Spoon into a piping bag fitted with a star tube. Immediately pipe mixture into ice-cream cones. Drizzle with remaining passionfruit to serve. (Makes 3½ cups.)

Avocado and lime

2.To make avocado and lime soft serve, freeze avocado on a baking-paper-lined tray for at least 6 hours or overnight. Process frozen avocado, lime juice and sugar until very smooth. Spoon into a piping bag fitted with a star tube. Immediately pipe mixture into ice-cream cones; sprinkle with lime rind to serve. (Makes 2½ cups.)

Banana and raspberry

3.To make banana and raspberry soft serve, freeze banana and raspberries on a baking-paper-lined tray for at least 6 hours or overnight. Place three-quarters of the frozen raspberries in a food processor; pulse quickly and briefly to roughly crumble. Freeze crumble until required. Process remaining frozen raspberries and frozen banana until very smooth. Spoon into a piping bag fitted with a star tube. Immediately pipe mixture into ice-cream cones; sprinkle with raspberry crumble to serve. (Makes 2½ cups.)

You will need to freeze the fruit for the avocado and lime recipe and the banana and raspberry recipe at least 6 hours or a day ahead. To pipe the soft serve you will need three disposable piping bags and three star tubes. The soft serve mixtures can be stored in the piping bags in the freezer for up to 2 hours before becoming too firm to pipe.
