1.Divide pineapple among four serving dishes; drizzle with the passionfruit and rum, then sprinkle with coconut.
You will need about four passionfruit for this recipe. The recipe can be made several hours ahead; add coconut just before serving. We used Malibu in this recipe, but you can use any rum-based coconut-flavoured liqueur. An orange-flavoured liqueur in place of rum, if preferred. Coconut can be toasted in a dry frying pan or in a moderate oven.
