Method

1.Preheat oven to 180°C/350°F.
2.Boil, steam or microwave potato until tender; drain. Mash potato in a large bowl with sour cream and pouring cream until smooth. Stir in egg, rocket and ½ cup of the parmesan; season.
3.Spoon half the potato mixture into four 1½-cup (375ml) ovenproof dishes; top with salmon. Cover salmon with remaining potato mixture; top with remaining cheese.
4.Bake, uncovered, 30 minutes or until browned lightly and set.

We used sebago potatoes in this recipe.
