Salmon fillo triangles



1.Preheat oven to 200°C/180°C fan-forced. Oil oven tray.
2.Melt butter in medium frying pan; cook onion and capsicum, stirring, until onion softens. Add flour; cook, stirring, until mixture bubbles.
3.Gradually add combined milk and cream; stir until mixture boils and thickens. Remove from heat; stir in juice, capers, spinach and salmon.
4.Brush one sheet of the filo with a little of the melted butter; fold in half lengthways. Place a quarter of the salmon mixture at bottom of one narrow edge of filo, leaving a 1cm border. Fold opposite corner of fllo diagonally across filling to form a triangle; continue folding to end of filo piece, retaining triangle shape.
5.Place triangle on tray, seam-side down. Repeat with remaining filo and salmon mixture.
6.Brush triangles with remaining melted butter; bake, uncovered, about 10 minutes or until browned lightly and heated through. Serve salmon triangles with mesclun and tomato.
