Butter cream


1.Preheat oven to 180°C. Grease two deep 23cm-square cake pans and a 15cm round cake pan; line bases with baking paper. Line five holes of the 12-hole (80ml) muffin pan with paper cases.
2.Make cakes according to directions on packets. Three-quarters fill paper cases with mixture; bake about 20 minutes. Pour enough of the remaining mixture into the round and square pans so they are three-quarters full; bake about 1 hour. Stand cakes in pans for 5 minutes before turning, top-side up, onto wire racks to cool.
3.Using a serrated knife, level tops of square cakes so they are the same height. Using a little butter cream sandwich square cakes together. Using a serrated knife, level top of round cake; turn cake cut-side down.
4.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth.
5.Secure square cake to 36cm-square cake board with a little butter cream (allowing space for drawbridge). Using one of the biscuits as a guide, cut rounds out of each corner of the square cake with a small serrated knife. Secure round cake to top of square cake with a little butter cream.
6.Tint three-quarters of the butter cream kelly green. Spread all over cakes. Stack six biscuits, joining each with a little butter cream, in cut-out corners. Tint remaining butter cream yellow, spoon into piping bag fitted with a large star tube; pipe onto each cupcake. Position one cupcake on top of each biscuit stack, and one on the top of the castle to make towers.
7.Gently push lollipops into each tower; position flags. Using the picture as a guide, position Milk Bottles, Chicos, Kool Fruits, Freckles and 17 Marella Jubes on cake.
8.Using scissors, trim wafers into shapes for door and drawbridge; position on cake. To make chains for drawbridge: cut skewers to about 12cm. Slide the Life Savers onto the skewers, finishing with remaining two Jubes; position on cake, securing with a little butter cream.

Flavoured Milk Bottles can be found in packets of ALLEN’S Milk Bottle Mania; use whichever colours you like. Remember to remove the skewers from the drawbridge before cutting the cake.
