Pear and walnut pizza

1.Preheat oven to 200°C. Lightly grease a baking tray.
2.In a jug, combine half the oil and garlic. Brush over pizza base. Place on baking tray.
3.Heat remaining oil in a large pan on high. Saute onion for 5-10 minutes, or until tender and starting to caramelise.
4.Spread onion over base. Top with pears and pancetta. Bake for 10-15 minutes, or until golden.
5.Meanwhile, simmer balsamic vinegar in a small pan for 10-15 minutes, or until syrupy.
6.Serve pizza topped with goat’s cheese, rocket and walnuts. Drizzle with balsamic reduction.

If you prefer, you can, use mild pancetta or prosciutto, as well as mild creamy blue cheese in place of goat’s cheese. For a thinner crust, try mountain bread.
