Orange marscapone frosting
1.Preheat oven to 200°C (180°C fan forced). Grease 12-hole (½-cup/125ml) oval friand pan with butter.
2.Melt butter, cool. Place egg whites in large bowl, whisk lightly with a fork. Add butter, ground almonds, sifted icing sugar and flour, liqueur, rind and peaches, stir until combined.
3.Divide mixture into pan holes. Bake friands about 20 minutes. Turn friands, top-side up, onto wire rack to cool.
4.To make orange marscapone frosting. Beat cream, sifted icing sugar and liqueur in small bowl with electric mixer until soft peaks form. Fold in mascarpone.
5.Spread frosting over friands, topped with extra thinly sliced glacé peach.
storage Friands will keep in an airtight container in the refrigerator for 2 days, or in the freezer (without frosting) for 2 months.Note
