Mascarpone matchsticks

These mascarpone matchsticks are quite possibly the simplest dessert in the world to make. Even the most novice of cooks can easily assemble these little pastry beauties. Bet you can't eat just one.

1.Preheat oven to 220°C/425°F. Line oven tray with baking paper.
2.Cut pastry sheet into four rectangles. Place on oven tray. Dust pastry with 2 teaspoons of the sifted icing sugar.
3.Bake pastry about 10 minutes; cool. Using a serrated knife, carefully split each rectangle in half horizontally.
4.Beat mascarpone, cream and 2 tablespoons of the remaining sifted icing sugar in a small bowl with an electric mixer until soft peaks form.
5.Spread jam and mascarpone mixture between pastry pieces. Serve matchsticks dusted with remaining sifted icing sugar.

Pastry shapes can be baked a day ahead;store in an airtight container. Mascarpone mixture can be made a day ahead; store, covered, in the refrigerator. Assemble and refrigerate matchsticks up to 2 hours before serving.
