1.Using an electric mixer, beat butter, sugar, honey and yolks in a small bowl until light and fluffy; transfer to a large bowl. Stir in sifted flours. Knead briefly on a floured surface; shape into a disc. Wrap dough in plastic food warp; Chill for 30 minutes.
2.Preheat oven to 180°C/160°C fan forced. Line 2 baking trays with baking paper.
3.Divide dough into 2 pieces. Roll each dough piece between sheets of baking paper until 4mm thick chill for 15 minutes. Dip a 7cm star-shaped cutter in flour. Cut 20 stars from each dough piece.
4.Dip a 3.5cm star-shaped cutter in flour. Cut small stars from centre of half the stars. Place on prepared trays; bake for 12 minutes or until lightly browned. Cool biscuits on trays. Spread a teaspoon of jam on each whole star; sandwich with remaining stars.
