Garlic and herb wedges

1.Preheat oven to 240°C/475°F. Oil oven tray.
2.Cut potatoes into wedges; combine in large microwave-safe bowl with seasoning and oil.
3.Cook, covered, in microwave oven, on high (100%), 5 minutes.
4.Place wedges, in a single layer, on oven tray. Roast, uncovered, about 20 minutes or until wedges are crisp.

You can shake the potato wedges, garlic, herbs and oil together in a sturdy, clean plastic bag ­ just throw the bag away after you’ve placed the wedges in the bowl. For a different version, add sea salt, coarsely ground black pepper and sweet paprika to the bag when shaking the potatoes and oil together, and ensure each wedge is seasoned all over.
