Dubai chocolate slice

This indulgent slice is inspired by Dubai chocolate.

Our no-bake pistachio chocolate slice is inspired by the viral Dubai chocolate bar, and richly flavoured with dates, nuts, kataifi pastry and vanilla bean.

For a touch of decadence, the slice is topped with dark chocolate and with extra chopped pistachios.

Method

1.

Grease and line a 10cm x 24cm (base measurement) loaf pan with non-stick baking paper, extending the paper 3cm over the sides.

For the base, combine the pistachios, cashews, coconut, cocoa powder, dates, water, coconut oil and salt in a food processor and process for about 1 minute or until a paste forms. Press evenly into the prepared pan and refrigerate for 30 minutes or until firm.

FILLING Meanwhile, loosen the pastry and use scissors to cut into 1cm pieces. Place the pastry in a large non-stick frying pan over medium heat and cook, stirring continuously, for 4-6 minutes or until deep golden and crisp. Place in a large bowl, add pistachio paste, vanilla, pistachios and coconut oil and mix well to combine. Spoon onto the base, pressing down firmly.

TOPPING Mix chocolate and coconut oil together, pour over the pistachio layer and sprinkle with pistachios. Refrigerate for 2 hours, or until set.

5.

Remove from the pan and slice into 18 slices using a hot knife.

Kataifi pastry (top right) is a key ingredient in the slice filling, giving a unique texture.

Kataifi pastry is a versatile ‘string’ pastry available from select grocers. It is often mistakenly referred to as ‘shredded fillo pastry’, however the process used to make kataifi pastry is very different to the way fillo is made. To make kataifi pastry, a crepe-like batter is dripped onto a rotating heated metal plate through fine spouts, where it’s briefly dried and cooked. Any unused pastry should be tightly wrapped back in the plastic sleeve or bag, making sure that air cannot get to the pastry. If sealed this way, the opened, unused pastry should last to the best before date printed on the packet. It can also be frozen but ensure it defrosts completely before use.

Medjool dates are large, soft, and naturally sweet fruits with a rich, almost caramel-like flavour and tender, chewy texture. 

Cocoa powder imparts a deep chocolate flavour to baked items. When used with other chocolate, the cocoa powder intensifies the chocolatiness.
