Ingredients

Method

1.Preheat oven to 180°C/350°F. Grease oven trays.
2.Beat egg white in small bowl with electric mixer until soft peaks form; gradually add sugar, beating until sugar dissolves. Stir in sifted flour and cocoa, then butter, milk and ground hazelnuts.
3.Spread level teaspoons of mixture into 8cm circles, about 4cm apart on trays.
4.Bake thins, in batches, about 5 minutes. Remove from tray immediately using metal spatula, place over rolling pin to cool.
