Beef burritos

Mexican-style baked beef burritos with guacamole and sour cream from Australian Women's Weekly.

1.Preheat oven to moderately hot (200°C/180°C fan-forced).
2.Make bean and beef filling. Heat oil in medium frying pan; cook onion and garlic, stirring,until onion softens. Add beef; cook, stirring, until browned. Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15 minutes or until mixture thickens.
3.Divide warm filling among tortillas, roll; secure with toothpicks.
4.Place filled tortillas on oiled oven tray; sprinkle with cheese and paprika. Bake, uncovered, about 10 minutes or until heated through.
5.Remove toothpicks; top with sour cream and coriander.

For a vegetarian alternative replace the beef mince with refried beans, either plain or chilli flavoured. And for vegetarians and meat eaters alike, this is delicious served with a dollop of guacamole.
