Method

1.Preheat oven to 180ºC (160ºC fan-forced). Grease and line a 12cm x 22cm loaf tin with baking paper.
2.Combine bacon, zucchini, carrot and cheese in a large bowl. Add the flour and toss through the vegetables. In a small bowl, whisk the oil and eggs together and add to the dry ingredients. Stir to combine. Season with salt and pepper.
3.Pour mixture into the loaf tin and spread evenly. Bake for 45 minutes, or until golden and firm to the touch. Remove and allow to cool. Cover with plastic wrap and store in the refrigerator until ready to serve.

Suitable to freeze. Not suitable to microwave. This savoury loaf would be ideal for a picnic.
