Looking for the ultimate side dish? We’ve taken classic salt & vinegar seasoning to the next level by pairing it with crispy air fryer potatoes.

First, creamy potatoes are parboiled in salt & vinegar until tender, then gently smashed and air fried until golden – with fragrant roast garlic and rosemary for even more flavour.

This air fryer potatoes recipe results in deliciously tangy, crunchy potatoes to go with the perfect roast dinner, or as an anytime snack.

You’ll need these…

Place potatoes in a large saucepan. Add vinegar, salt and enough water to just cover; bring to the boil. Boil, partially covered, for 15–20 minutes (the time will vary depending on the size of the potatoes) or until potatoes are tender; drain.

Preheat a 5.3-litre air fryer to 200°C for 3 minutes.

Transfer potatoes to a large oven tray. Using a potato masher or the back of a spoon, press down on potatoes until flattened slightly and skins split. Brush potatoes with oil.

Taking care, place potatoes in the air fryer basket; at 200°C, cook for 30 minutes, turning twice during cooking time, or until potatoes are golden. Add garlic 10 minutes into cooking time and rosemary in the last 5 minutes.

Season smashed potatoes generously with salt. Serve with roast garlic and rosemary sprigs.
