Although most people associate papaya with tropical islands, it's actually really beautiful when it comes into season in Australia, which is usually around November as the weather starts to warm up. This sweet, melon-like fruit complements sweet and savoury dishes equally as well, with everything from Asian-spiced salads to sweet chutneys to accompany your roast meat. You can also make this pastry using a food processor. Process flour, icing sugar, ginger and butter until crumbly. Add egg yolk and enough of the water to make ingredients just come together. Knead gently on floured surface until smooth. You need 1 small papaya (650g) for this recipe. Note
