papaya and orange salad



1.Using one orange only, peel thinly, then slice rind finely (you need 1 tablespoon rind), squeeze and reserve the juice (you need 1/3 cup).
2.Combine reserved juice, the water, sugar and vanilla bean in small saucepan, bring to the boil. Reduce heat, simmer, uncovered, about 5 minutes or until syrup thickens. Remove from heat, stir in orange rind. Refrigerate about 20 minutes or until cool. Discard vanilla bean.
3.Peel and thinly slice remaining oranges. Combine papaya, orange and kiwifruit in serving bowls, drizzle with syrup, stand 10 minutes before serving.

Syrup can be made the night before and stored, covered, in the refrigerator.
