Classic Sunday breakfast fry-up

The ideal cure for Saturday night's indulgence.

Whether it's to soak up the remnants of last night's over-indulgence or just a hearty way to start the day you can't beat a good ol' English fry up. With eggs, bacon, mushrooms and sausage (and tomato for something healthy, of course) it just doesn't get much better.

Sunday fry-up
  • 50 gram butter
  • 300 gram button mushrooms, sliced thickly
  • 8 chipolata sausages (240g)
  • 4 rindless bacon slices (260g)
  • 2 tomatoes (190g), halved
  • 1 tablespoon olive oil
  • 4 eggs

    Melt butter in a medium saucepan; cook mushrooms, stirring, for 5 minutes or until tender.

    Meanwhile, cook sausages and bacon in a heated oiled large frying pan until bacon is crisp and sausages are cooked through. Remove from pan; cover to keep warm. Drain fat from pan.

    Preheat grill.

    Place tomato halves, cut-side up, onto a baking tray. Cook under grill until browned.

    Meanwhile, heat oil in same uncleaned frying pan. Break eggs into pan; cook until egg white has set and yolk is cooked as desired.

    Serve mushrooms, sausages, bacon, tomato and eggs with thick toast, if you like
