Ingredients

Summer spaghetti with peas and ham
  • 400 gram spaghetti
  • 1 cup (120g) frozen peas
  • 2 clove garlic, peeled
  • 1/4 cup (40g) pine nuts, toasted
  • 1/2 cup lightly packed fresh basil leaves
  • 1/4 cup lightly packed fresh mint leaves
  • 1/2 cup (40g) flaked parmesan cheese
  • 2 tablespoon extra virgin olive oil
  • salt and freshly ground black pepper, to taste
  • 200 gram leg ham, shredded finely

Method

    Cook the pasta in a large saucepan of boiling, salted water until just tender; drain.

    Meanwhile, in a medium microwave-safe bowl, cook frozen peas on high (100%) for 2 minutes or until tender.

    Transfer peas to a food processor with garlic, pine nuts, herbs, cheese, oil, salt and pepper. Process until almost smooth.

    Toss pea mixture through hot pasta. Add ham and toss gently to combine.

    Serve with extra parmesan cheese, if desired.
