Summer spaghetti with peas and ham
- 400 gram spaghetti
- 1 cup (120g) frozen peas
- 2 clove garlic, peeled
- 1/4 cup (40g) pine nuts, toasted
- 1/2 cup lightly packed fresh basil leaves
- 1/4 cup lightly packed fresh mint leaves
- 1/2 cup (40g) flaked parmesan cheese
- 2 tablespoon extra virgin olive oil
- salt and freshly ground black pepper, to taste
- 200 gram leg ham, shredded finely
Method
Summer spaghetti with peas and ham
- 1Cook the pasta in a large saucepan of boiling, salted water until just tender; drain.
- 2Meanwhile, in a medium microwave-safe bowl, cook frozen peas on high (100%) for 2 minutes or until tender.
- 3Transfer peas to a food processor with garlic, pine nuts, herbs, cheese, oil, salt and pepper. Process until almost smooth.
- 4Toss pea mixture through hot pasta. Add ham and toss gently to combine.
- 5Serve with extra parmesan cheese, if desired.
