Pistachio and lime friands

In France, friands are better known as financiers because they were originally baked in tiny, gold-bar shaped pans. These dainty little pistachio and lime friands are perfect for morning or afternoon tea.

Pistachio and lime friands
  • 1 cup (140g) unsalted pistachios
  • 6 egg whites
  • 185 gram butter, melted
  • 1 1/2 cup (240g) icing sugar
  • 1/2 cup (75g) plain flour
  • 1 tablespoon lime juice
  • 2 teaspoon finely grated lime rind

    Preheat oven to 200°C/180°C fan-forced. Grease 12 x ½-cup (125ml) oval friand pans; stand on oven tray.

    Process nuts until ground finely.

    Place egg whites in large bowl; whisk lightly with fork until combined. Add butter, sifted icing sugar and flour, juice, rind and nuts; stir until just combined. Divide mixture among pans.

    Bake friands, uncovered, about 20 minutes. Stand in pans 5 minutes before turning, top-side up, onto wire rack to cool.
