Pistachio and lime friands

In France, friands are better known as financiers because they were originally baked in tiny, gold-bar shaped pans. These dainty little pistachio and lime friands are perfect for morning or afternoon tea.

1.Preheat oven to 200°C/180°C fan-forced. Grease 12 x ½-cup (125ml) oval friand pans; stand on oven tray.
2.Process nuts until ground finely.
3.Place egg whites in large bowl; whisk lightly with fork until combined. Add butter, sifted icing sugar and flour, juice, rind and nuts; stir until just combined. Divide mixture among pans.
4.Bake friands, uncovered, about 20 minutes. Stand in pans 5 minutes before turning, top-side up, onto wire rack to cool.
