Ham salad with ricotta and balsamic figs

Ham salad with ricotta and balsamic figs
  • 6 medium (360g) figs, halved
  • 2 tablespoon balsamic glaze
  • 1 raddichio, cut into eighths
  • 50 gram wild rocket
  • 8 slice leg ham
  • 200 gram fresh ricotta cheese
  • 1/4 cup (60ml) extra virgin olive oil
  • extra balsamic glaze, to serve

    Preheat oven grill on high.

    Put the fig halves on an oven tray and brush the balsamic glaze over the cut side of the figs. Grill for a few minutes or until the fig looks shiny.

    Arrange the radicchio wedges and rocket on a serving platter. Top with the ham, small spoonfuls of the ricotta and the glazed figs. Drizzle with the oil and a little extra balsamic glaze.


Not suitable to freeze or microwave.
