Ham salad with ricotta and balsamic figs
- 6 medium (360g) figs, halved
- 2 tablespoon balsamic glaze
- 1 raddichio, cut into eighths
- 50 gram wild rocket
- 8 slice leg ham
- 200 gram fresh ricotta cheese
- 1/4 cup (60ml) extra virgin olive oil
- extra balsamic glaze, to serve
Method
Ham salad with ricotta and balsamic figs
- 1Preheat oven grill on high.
- 2Put the fig halves on an oven tray and brush the balsamic glaze over the cut side of the figs. Grill for a few minutes or until the fig looks shiny.
- 3Arrange the radicchio wedges and rocket on a serving platter. Top with the ham, small spoonfuls of the ricotta and the glazed figs. Drizzle with the oil and a little extra balsamic glaze.
