1.Preheat oven to moderate, 180°C. Lightly grease a 15 x 25cm loaf pan. Line base and sides with baking paper.
2.Place kumara on a baking tray; drizzle with half the oil. Bake 10-15 minutes, turning once, until tender.
3.Meanwhile, heat remaining oil in a large frying pan on high. Saute onion and garlic 3-4 minutes, until tender; allow to cool.
4.In a large bowl, whisk together eggs and cream, until combined. Stir through ham, peas, capsicum and chives. Season to taste.
5.Pour mixture into pan, layering with kumara. Bake 30-35 minutes. Cool slightly; cut into slices. Serve with rocket salad.
