Fruit and nut loaf
- 1 cup brown sugar
- 1/2 cup natural yoghurt
- 1/2 cup buttermilk
- 3 eggs, lightly beaten
- 2 tablespoon vegetable oil
- 1 cup rice flour
- 1 1/2 teaspoon gluten-free baking powder
- 1/2 teaspoon bicarbonate of soda
- 1 cup hazelnut meal
- 1 cup dried fruit medley, roughly chopped
- 2 tablespoon honey
- butter, to serve
Method
Fruit and nut loaf
- 1Preheat oven to moderate, 180°C. Lightly grease and line a 10 x 20cm loaf pan.
- 2In a large bowl, combine sugar, yoghurt, buttermilk, eggs and oil.
- 3Sift flour with baking powder and bicarbonate of soda onto a plate or sheet of baking paper. Fold into yoghurt mixture with hazelnut meal, fruit and honey.
- 4Spoon into prepared pan, smoothing top. Bake for 50-60 minutes until golden and cooked when tested. Cool in pan for five minutes before diming onto a wire rack to cool completely. Serve sliced and spread with butter.
