1.Combine ricotta, sifted flour, sugar, nutmeg, egg and apple in medium bowl.
2.Heat oil in large saucepan; deep-fry rounded tablespoons of ricotta mixture, in batches, until browned lightly. Drain on absorbent paper. Toss fritters in combined extra sugar and cinnamon.
3.Serve fritters drizzled with maple syrup.
