Method

1.Put the garlic and half the oil in a medium bowl; mix them together with a small spoon. Use tongs to add the steaks to the bowl and turn them in the mixture until they are covered all over.
2.Put the rest of the oil in a medium frying pan. Turn the stove on to medium and heat the pan. Add the onion; turn down the heat to low. Stir the onion occasionally with a wooden spoon for about 20 minutes or until the onion is soft.
3.Add the sugar and vinegar; stir over low heat for 10 more minutes or until the onion is golden brown and caramelised. Take the onion mixture out of the pan and put it into a small bowl.
4.Meanwhile, put a little oil in a large frying pan. Turn the stove on to medium-high and heat the pan. Put the steaks into the pan; when they are brown underneath, use tongs to turn the steaks over.
5.Cook steaks until brown on the other side and until they are cooked the way you like them. To judge when your steak is cooked the way you like it, press the surface with your finger or the back of a pair of tongs.
6.Rare steak (red in the middle) feels soft and spongy, medium-rare (pinkish-red in the middle) feels soft but springy, medium (pink in the middle) feels firm but still springy, well-done (no pink in the middle) feels firm.
7.Toast the bread both sides. Put one slice of toast on each of four serving plates; top with the lettuce, steak, onion, pickle and chutney. Place the rest of the toast slices on top to make sandwiches.
