Ingredients: 180 gram soba noodles; 2 medium mandarins (400g), segmented, chopped coarsely; 2 green onions (scallions), sliced thinly; 1/2 cup (80g) roasted pine nuts; 40 gram baby rocket leaves (arugula) mandarin vinaigrette; 1/4 cup (60ml) olive oil; 1/4 cup (60ml) mandarin juice; 1 tablespoon rice wine vinegar

Ingredients

180 gram soba noodles

2 medium mandarins (400g), segmented, chopped coarsely

2 green onions (scallions), sliced thinly

1/2 cup (80g) roasted pine nuts

40 gram baby rocket leaves (arugula) mandarin vinaigrette

1/4 cup (60ml) olive oil

1/4 cup (60ml) mandarin juice

1 tablespoon rice wine vinegar

Method

1.Cook noodles in medium saucepan of boiling water until tender, drain. Rinse under cold water, drain.

2.Meanwhile, make mandarin vinaigrette. Combine oil, mandarin juice and vinegar in screw-top jar, shake well.

3.Combine noodles and vinaigrette in large bowl with remaining ingredients.

Soba noodles are long, flat thin Japanese buckwheat noodles from Asian food stores and major supermarkets.
