1.Cook noodles in medium saucepan of boiling water until tender, drain. Rinse under cold water, drain.
2.Meanwhile, make mandarin vinaigrette. Combine oil, mandarin juice and vinegar in screw-top jar, shake well.
3.Combine noodles and vinaigrette in large bowl with remaining ingredients.
Soba noodles are long, flat thin Japanese buckwheat noodles from Asian food stores and major supermarkets.
