1.Whisk eggs with 2 tablespoons of the cheese in medium bowl until combined.
2.Melt a quarter of the butter in small frying pan (base 16cm). When butter is foaming, pour a quarter of the egg mixture into pan, cook over medium heat, tilting pan, until omelette is set.
3.Top half the omelette with a quarter of the salmon, a quarter of the combined herbs and a quarter of the remaining cheese. Fold omelette over to enclose filling.
4.Repeat to make three more omelettes.
5.Slide omelette onto serving plate.
