1.Whisk egg and milk together in a small bowl; season.
2.Add bread to egg mixture, turn to coat. Stand for 2 minutes or until bread has soaked up the mixture.
3.Lightly spray a large heated non-stick frying pan with oil; add bread to pan, cook, over medium heat, for 2 minutes each side or until golden and cooked through.
4.Place french toast on serving plates; top with salmon, avocado and rocket leaves. Sprinkle with dill, if you like.
