Ingredients

Tomato, onion and mint sambal
Banana and coconut sambal
Cucumber raita

Method

Tomato, oninon and mint sambal

1.Add seeds to a small heated dry frying pan; cook, shaking the pan continuously, until fragrant. Crush seeds in a mortar using a pestle or with a rolling pin.
2.Combine all of the ingredients in a small bowl.

Banana and coconut sambal

3.Combine all the ingredients. Serve immediately.

Cucumber raita

4.Add seeds to a small heated dry frying pan; cook, shaking the pan continuously, until fragrant. Crush seeds in a mortar using a pestle or with a rolling pin.
5.Squeeze the excess juice from the grated cucumber. Combine the yogurt, cucumber, crushed cumin seeds and half the cayenne. Sprinkle with remaining cayenne and paprika.
6.Not suitable to freeze. Not suitable to microwave.
