1.Sprinkle lamb with seasoning. Cook lamb on heated oiled grill plate (or grill or barbecue) until browned and cooked as desired.
2.Meanwhile, dry-fry cumin seeds in small frying pan until fragrant; cool.
3.Top each lamb cutlet with a teaspoon of baba ganoush, cumin seeds and onion. Serve immediately.
