Caper & herb mayonnaise
1.In a medium bowl, season lamb; shape mixture into two patties.
2.In a medium frying pan, heat oil over medium heat; cook patties for about 4 minutes each side, or until cooked through.
3.Meanwhile, to make caper and herb mayonnaise: In a small bowl, combine ingredients; season to taste.
4.Split rolls; spread with mayonnaise. Sandwich spinach, patties and tomato between rolls.
