haloumi with lemon, olives and oregano



1.Cut haloumi into 24 slices; place in a single layer in shallow dish. Combine juice and ½ cup of oil in a small jug; pour over haloumi, stand 10 minutes.
2.Drain haloumi slices, reserve lemon mixture. Heat remaining oil in large frying pan; cook drained haloumi slices until browned both sides.
3.Add reserved lemon mixture to pan; add oregano and olives. Stir until heated through.
4.Divide rocket among serving plates; top each with four slices of haloumi. Spoon dressing over cheese.

Fried haloumi needs to be eaten as soon as possible after cooking as it becomes tough and rubbery as it cools. It only takes a few minutes to fry, cook this dish just before serving.
