Our version uses capsicum and endive with a sweet sesame-soy dressing and the crunch is addictive!

1.Cut capsicum in half lengthways. Remove and discard seeds and membranes, slice capsicum pieces thinly. Trim endive, discard hard ends of leaves.
2.Combine capsicum and endive with noodles, onion and herbs in large bowl. Add dressing, toss to combine.
3.To make dressing, combine remaining ingredients in screw-top jar, shake well.

Crispy fried noodles are sold packaged (usually in a 100g packet), already deep-fried and ready to eat. They are sometimes labelled crunchy noodles, and are available in two widths ­ thin and spaghetti-like, or wide and flat, like fettuccine. We used the thin variety in this recipe.
