1.Heat 1 tablespoon of the oil in a wok over medium heat; stir-fry onion and chilli for about 1-2 minutes or until onion softens. Add paste; stir-fry for about 30 seconds, or until mixture is fragrant.
2.Add rice; stir-fry for about 1 minute, or until heated through. Remove from heat; place in a large bowl. Add crab meat, juice and sauce; toss to combine.
3.In a medium bowl, whisk eggs with the water. Heat about a quarter of the remaining oil in same cleaned wok; pour a quarter of the egg mixture into wok. Cook, tilting pan, over low heat for about 1 minute or until almost set. Spoon a quarter of the fried rice into centre of the omelette; using a spatula, fold four sides of the omelette over to enclose filling.
4.Press omelette firmly with spatula; turn carefully to brown other side.
5.Remove omelette from wok; cover to keep warm.
6.Repeat process with remaining oil, egg mixture and fried rice.
7.Place omelettes on serving plate; serve with lime.
