Chilli prawn salad with noodles

Make the most of alfresco dining with this simple and healthy chilli prawn salad with noodles. It is packed full of the fresh, distinctive flavours of Asia and makes a healthy and delicious light lunch or supper.

1.Shell and devein prawns, leaving tails intact. Combine prawns in a large bowl with juice, sauce, chillies and sugar.
2.Place noodles in a large heatproof bowl, cover with boiling water; stand until tender, drain.
3.Add noodles to prawn mixture with mint and sprouts; toss gently to combine.

We served the salad on butter lettuce leaves, however, this is optional. Prawns have a rich flavour and moist flesh. They are low in saturated fat and high in protein.
