Ingredients

Method

1.Cut chicken fillet in half horizontally. Combine chicken in large bowl with curry paste and 1 tablespoon of the yoghurt.
2.Lightly spray heated grill plate (or grill or barbecue); cook chicken until browned all over and cooked through. Cover; stand 5 minutes, then slice thinly.
3.Meanwhile, combine cucumber, mint, onion and remaining yoghurt in medium bowl.
4.Just before serving, top pita breads with salad leaves then chicken and yoghurt mixture. Roll to enclose filling.

Cook the chicken the night before.
